Ingredients
The following ingredients have 4 Servings
- 400 g fusilli pasta (or the pasta of your choice)
- 1 tin chopped tomatoes
- 20 cherry tomatoes (cut in half)
- 4 cloves garlic (finely chopped/crushed)
- 1/2 onion (finely chopped)
- 1/2 yellow pepper (finely diced)
- 4 spring onions (finely chopped)
- 450 ml vegetable stock (made up with 1 veg stock cube)
- 35 ml vodka
- 3 tbsp tomato puree
- 5 tbsp Arla Tomato and Basil Quark
- low calorie cooking spray
- sea salt
- freshly ground black pepper
- 1 handful fresh parsley (chopped)
- 1/2 tsp Marmite (or Worcestershire sauce)
Instruction
- Cook the pasta according to instructions on the pack. It will probably take 10-12 minutes.
- While the pasta is cooking, sauté the onions, peppers, spring onion and garlic in a little low calorie cooking spray until they have started to soften.
- Remove from the heat, add the tomato puree and vodka and stir well.
- Return to the heat and stir in the tin of chopped tomatoes, marmite and veg stock.
- Simmer for 5 minutes, add the tomato halves. Check the pasta and drain when cooked.
- Remove the sauce from the heat, stir in the quark and season to taste.
- Mix the pasta and sauce together, and serve sprinkled with some chopped fresh parsley.
