Ingredients

The following ingredients have 4 Servings
  • 400 g fusilli pasta (or the pasta of your choice)
  • 1 tin chopped tomatoes
  • 20 cherry tomatoes (cut in half)
  • 4 cloves garlic (finely chopped/crushed)
  • 1/2 onion (finely chopped)
  • 1/2 yellow pepper (finely diced)
  • 4 spring onions (finely chopped)
  • 450 ml vegetable stock (made up with 1 veg stock cube)
  • 35 ml vodka
  • 3 tbsp tomato puree
  • 5 tbsp Arla Tomato and Basil Quark
  • low calorie cooking spray
  • sea salt
  • freshly ground black pepper
  • 1 handful fresh parsley (chopped)
  • 1/2 tsp Marmite (or Worcestershire sauce)

Instruction

  • Cook the pasta according to instructions on the pack. It will probably take 10-12 minutes.
  • While the pasta is cooking, sauté the onions, peppers, spring onion and garlic in a little low calorie cooking spray until they have started to soften.
  • Remove from the heat, add the tomato puree and vodka and stir well.
  • Return to the heat and stir in the tin of chopped tomatoes, marmite and veg stock.
  • Simmer for 5 minutes, add the tomato halves. Check the pasta and drain when cooked.
  • Remove the sauce from the heat, stir in the quark and season to taste.
  • Mix the pasta and sauce together, and serve sprinkled with some chopped fresh parsley.
