Ingredients

The following ingredients have 4 Servings
  • 1/2 tbsp. olive oil
  • 2 cups thinly sliced spinach
  • 3 cloves garlic (minced)
  • 2 cups tomato sauce
  • 1 cup Greek yogurt
  • 3 cups dry pasta (I used brown rice fusilli)

Instruction

  • Start your pasta cooking according to the package directions
  • Meanwhile, make the sauce
  • Heat oil in a medium sauce pan over medium low heat. Add in the sliced spinach and minced garlic and sauté until tender, about 5 minutes
  • Stir in tomato sauce and once warmed, stir in the Greek yogurt and reduce heat to low
  • Drain your cooked pasta and top with the sauce
