Ingredients
The following ingredients have 4 Servings
- 1/2 tbsp. olive oil
- 2 cups thinly sliced spinach
- 3 cloves garlic (minced)
- 2 cups tomato sauce
- 1 cup Greek yogurt
- 3 cups dry pasta (I used brown rice fusilli)
Instruction
- Start your pasta cooking according to the package directions
- Meanwhile, make the sauce
- Heat oil in a medium sauce pan over medium low heat. Add in the sliced spinach and minced garlic and sauté until tender, about 5 minutes
- Stir in tomato sauce and once warmed, stir in the Greek yogurt and reduce heat to low
- Drain your cooked pasta and top with the sauce
