Ingredients

The following ingredients have 4 Servings
  • 2 pounds boneless skinless chicken breasts (, pat dry)
  • 6-8 slices Swiss cheeses
  • 3/4 cup mayonnaise
  • 3/4 cup plain Greek yogurt
  • 1 cup freshly grated parmesan cheese (, divided)
  • 3/4 teaspoon salt
  • 3/4 teaspoon freshly ground black pepper
  • 1 1/2 teaspoons garlic powder
  • hot cooked rice (, for serving)

Instruction

  • Preheat the oven to 375 degrees F and lightly grease a 9X13-inch baking pan with cooking spray.
  • Season chicken with salt and pepper on both sides and lay pieces in the bottom of your prepared pan. Layer the Swiss cheese slices over the chicken.
  • In a medium bowl, whisk together the mayonnaise, yogurt, 3/4 cup Parmesan cheese, salt, pepper, and garlic powder. Spread this mixture over the chicken and cheese. Top with remaining 1/4 cup Parmesan cheese.
  • Bake for 30-45 minutes, or until the chicken is cooked through. Serve over rice.
