Ingredients

The following ingredients have 4 Servings
  • 1 pound browned/crumbled sausage (I like to make a large batch ahead of time and freeze in 1lb portions)
  • 4 cups shredded potato
  • 4 cups chicken stock (here's how to make it yourself)
  • 2 cups sweet corn kernels
  • 1 cup heavy cream (whole milk or half & half will work too)
  • optional: greens (My preference is mustard greens or kale, but a bag salad works just fine in a pinch!)

Instruction

  • Add sausage, potato, corn, and stock to a slow cooker (here's the one I have and love) and stir.  Cook high for 4 hours or low for 6 hours.
  • Stir in cream and cook an additional 15 minutes until everything is heated through again (don't let it boil).
  • Pour into bowls over greens and enjoy!
