Ingredients

The following ingredients have 2 Servings
  • 8 bacon rashers cut into strips
  • 6 mushrooms thinly sliced
  • 1/3 cup spinach
  • 1 tsp crushed garlic
  • 1/2 tsp butter
  • 2 egg
  • 2 egg yolks
  • 1/4 cup parsley finely chopped
  • 1/2 cup cream
  • 1/2 cup parmesan grated
  • 150 g linguine pasta
  • 1 tsp olive oil

Instruction

  • Boil water until bubbling, add teaspoon of olive oil, add linguine and boil until just tender.
  • Whisk 2 eggs and 2 egg yolks, salt and pepper, Parmesan and cream.
  • Fry bacon, mushrooms, spinach and garlic in butter until bacon is slightly browned.
  • Meanwhile drain linguine and place back into hot saucepan. Add the egg and bacon mixture, mix and then add parsley.
