Ingredients
The following ingredients have 4 Servings
- 1 bunch kale (any variety)
- 1/3 cup walnuts (lightly toasted and roughly chopped (Pine nuts are a great alternative but only use 1/4 cup.))
- ¼ cup sour cream
- ¼ cup parmesan cheese (grated)
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 clove garlic (minced)
- ¼ teaspoon salt
- pepper (to taste)
Instruction
- Remove and discard large stems from the kale and shred the remaining leaves. Toss in a large bowl with the toasted walnuts and set aside.
- In a smaller bowl, whisk together the sour cream, cheese, olive oil, lemon juice, garlic, salt, and pepper. Pour it over the kale mixture and toss to coat. Serve immediately.
