Ingredients

The following ingredients have 4 Servings
  • 1 bunch kale (any variety)
  • 1/3 cup walnuts (lightly toasted and roughly chopped (Pine nuts are a great alternative but only use 1/4 cup.))
  • ¼ cup sour cream
  • ¼ cup parmesan cheese (grated)
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic (minced)
  • ¼ teaspoon salt
  • pepper (to taste)

Instruction

  • Remove and discard large stems from the kale and shred the remaining leaves. Toss in a large bowl with the toasted walnuts and set aside.
  • In a smaller bowl, whisk together the sour cream, cheese, olive oil, lemon juice, garlic, salt, and pepper. Pour it over the kale mixture and toss to coat. Serve immediately.
