Ingredients

The following ingredients have 2 Servings
  • 1 pack gnocchi, about 350-400g
  • 100g soft rindless goat’s cheese, sliced
  • 2 tbsp  double cream or mascarpone or crème fraîche
  • 2 tsp red wine vinegar
  • olive oil
  • 2 tsp capers, rinsed
  • 8 green olives, pitted and sliced
  • ½ bunch flat-leaf parsley, chopped
  • ½ small red onion, thinly sliced

Instruction

  • Heat the grill. Cook the gnocchi following packet instructions, then drain and toss with the goat’s cheese and cream. Tip into individual heatproof dishes and grill until golden.
  • Whisk the vinegar with 1 tbsp olive oil and season, then toss with the capers, olives, parsley and onion. Pile onto the gnocchi and serve.
