Ingredients
The following ingredients have 8 Servings
- 4 slices center cut bacon
- 3 oz 1/3 less fat cream cheese (softened to room temperature)
- ¾ cup fat free sour cream
- 2 oz 50% reduced fat sharp cheddar (shredded (I use Cabot))
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon chili powder
- 20 oz frozen corn kernels
- 1 medium jalapeno pepper (seeded and diced)
- 2 garlic cloves (minced)
- 2 scallions (sliced)
Instruction
- Pre-heat the oven to 400 degrees. Lightly mist a 2 QT casserole dish with cooking spray and set aside.
- Cook the bacon to crisp using package directions and transfer to paper towels to drain. Chop or crumble the bacon into small pieces.
- Place the softened cream cheese, sour cream, shredded cheddar, salt, pepper, and chili powder in a large mixing bowl and stir together using a spoon or spatula. Once mixed, add the bacon, corn, diced jalapenos, garlic, and scallions and stir until well combined.
- Transfer the mixture to the prepared baking dish and bake for 25-30 minutes until heated through. Allow to cool for a few minutes and stir before serving.
