  • 3 pounds potatoes (peeled and cut into 1-inch pieces (I've used Yukon Gold or Russet))
  • 3 tablespoons melted butter
  • 1 14 oz can cream of mushroom soup
  • 1 pint sour cream (16 ounces)
  • 1/3 cup thinly sliced green onions
  • 1 heaping cup grated cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
