- 3 pounds potatoes (peeled and cut into 1-inch pieces (I've used Yukon Gold or Russet))
- 3 tablespoons melted butter
- 1 14 oz can cream of mushroom soup
- 1 pint sour cream (16 ounces)
- 1/3 cup thinly sliced green onions
- 1 heaping cup grated cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
