Ingredients
The following ingredients have 6 Servings
- 1 pound linguine pasta
- 1.5 pounds shrimp (shelled, de-veined)
- 3 teaspoons Cajun seasoning (divided)
- 6 tablespoons salted butter (divided)
- 3 bell peppers (various colors, sliced)
- 1 bunch green onion
- 8 oz cremini or button mushrooms (sliced)
- 2 cups heavy cream
Instruction
- Cook pasta according to package directions.
- Toss the shrimp with 1 teaspoon of Cajun seasoning. Heat a large skillet over medium-high heat. Add in 3 tablespoons of butter. Cook the shrimp until no longer gray and they are pink in color. About 3 minutes. Remove shrimp and set aside.
- In the same skillet as you cooked the shrimp, without cleaning, melt the remaining 3 tablespoons of butter. Add in bell peppers, green onions, and mushrooms. Sauté until veggies are tender, about 5 to 7 minutes. Sprinkle remaining 2 teaspoons of Cajun seasoning over veggies and cook 1 minute.
- Pour in heavy cream and bring to a simmer. Simmer for two minutes.
- Stir in cooked pasta and toss until coated and veggies are evenly distributed. Top with shrimp and squeeze of a fresh lemon and serve hot.
