Ingredients

The following ingredients have 6 Servings
  • 1 pound linguine pasta
  • 1.5 pounds shrimp (shelled, de-veined)
  • 3 teaspoons Cajun seasoning (divided)
  • 6 tablespoons salted butter (divided)
  • 3 bell peppers (various colors, sliced)
  • 1 bunch green onion
  • 8 oz cremini or button mushrooms (sliced)
  • 2 cups heavy cream

Instruction

  • Cook pasta according to package directions.
  • Toss the shrimp with 1 teaspoon of Cajun seasoning. Heat a large skillet over medium-high heat. Add in 3 tablespoons of butter. Cook the shrimp until no longer gray and they are pink in color. About 3 minutes. Remove shrimp and set aside.
  • In the same skillet as you cooked the shrimp, without cleaning, melt the remaining 3 tablespoons of butter. Add in bell peppers, green onions, and mushrooms. Sauté until veggies are tender, about 5 to 7 minutes. Sprinkle remaining 2 teaspoons of Cajun seasoning over veggies and cook 1 minute.
  • Pour in heavy cream and bring to a simmer. Simmer for two minutes.
  • Stir in cooked pasta and toss until coated and veggies are evenly distributed. Top with shrimp and squeeze of a fresh lemon and serve hot.
