Ingredients

The following ingredients have 4 Servings
  • 12 ounces smoked andouille sausage (sliced into 1/2 inch pieces)
  • 1/2 tablespoon olive oil
  • 1/4 cup diced onion
  • 1/3 cup diced bell pepper (about 1 large pepper, or 3 mini peppers)
  • 1 tablespoon minced garlic
  • 10 ounces diced tomatoes
  • 2 cups low sodium chicken stock
  • 1 tablespoon cajun seasoning
  • 10 ounces rotini pasta
  • 4 ounces cream cheese (softened)

Instruction

  • In a large stock pan, heat the oil over medium-high heat. Add in sausage, peppers, and onions and saute until the onions begin to soften for about 3-5 minutes. 
  • Add in the garlic and saute for 1 minute longer.
  • Add in stock, diced tomatoes, and Cajun seasoning and bring to a boil.
  • Add in pasta, reduce heat to simmer, and cover with a lid. Cook for 10 minutes. 
  • Remove lid and add in cream cheese and stir into pasta. Cook until cream cheese has melted and pasta has finished cooking for about 5 minutes. 
  • Serve.
