Ingredients

The following ingredients have 8 Servings
  • 12 oz. package brown rice rotini noodles
  • juice from 2 limes (about 2 tablespoons lime juice)
  • 2 teaspoons minced garlic
  • salt and pepper
  • 1 avocado (peeled and chopped)
  • 1/2 cup black beans (drained and rinsed)
  • 1/2 medium cucumber
  • 1 cup tomatoes (chopped)
  • 2 green onions (chopped)
  • 1/4 cup fresh cilantro (chopped)
  • 1/2 cup Mexican-blend cheese (shredded)
  • 1 package ranch dip
  • 2 cups plain Greek yogurt

Instruction

  • Cook pasta according to directions. Rinse with cold water.
  • Add vegetables, beans and cilantro to the pasta. Stir until combine.
  • Toss in cheese.
  • Combine the ranch dip with the Greek yogurt and stir well. Add 1-2 cups of the ranch dressing to pasta salad.
  • Refrigerate for at least one hour before serving.
