Ingredients
The following ingredients have 4 Servings
- 1 Orange (zest and juice)
- 3 handfuls Arugula
- 4 scallions (finely sliced in rings)
- 2 cloves garlic cloves
- 2.5 cups vegetable stock
- 1.75 cups natural Yogurt
- 0.5 cup Crème fraiche
Instruction
- Blend the orange juice, rocket, spring onions, garlic and vegetable stock in a mixer to a fine purée. Add the yoghurt and crème fraîche and blend again.
- Season to taste with salt and ground black pepper, pour into bowls and serve garnished with orange zest.
