Ingredients

The following ingredients have 4 Servings
  • 1 Orange (zest and juice)
  • 3 handfuls Arugula
  • 4 scallions (finely sliced in rings)
  • 2 cloves garlic cloves
  • 2.5 cups vegetable stock
  • 1.75 cups natural Yogurt
  • 0.5 cup Crème fraiche

Instruction

  • Blend the orange juice, rocket, spring onions, garlic and vegetable stock in a mixer to a fine purée. Add the yoghurt and crème fraîche and blend again.
  • Season to taste with salt and ground black pepper, pour into bowls and serve garnished with orange zest.
