- 3 cups butternut squash, (peeled, deseeded and diced (approximately 1/2 medium))
- 3 cups acorn squash, (peeled, deseeded and diced (approximately 1 small))
- 1 1/2 cups sweet potato, (peeled and diced (approximately 1 medium))
- 1/4 cup brandy
- 2 sprigs fresh thyme
- 2 cups chicken stock, (preferably homemade)
- 1 1/2 cups heavy cream
- 1 teaspoon salt or to taste
- fresh ground black pepper to taste
- 2 cups pecan pieces or halves
- 1 tablespoon unsalted butter
- 3 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- 3/4 teaspoon ground cayenne pepper
- 1 1/2 tablespoons real maple syrup
- 1 1/2 teaspoons kosher salt
