Ingredients

The following ingredients have 2 Servings
  • 0.25 cup sugar
  • 0.5 cup water
  • 0.5 lemon (juice and pared zest)
  • 7 ozs mixed Fruit (cherries, sliced peaches, orange segments)
  • 0.667 cup Greek yogurt
  • vanilla extract
  • 2 Tbsps brown sugar

Instruction

  • Put the sugar, water, lemon juice and zest into a pan. Bring to a boil, then simmer for 4-5 minutes until it forms a thin syrup. Remove the lemon zest and set aside to cool.
  • Pour the syrup over the prepared fruit and chill for 2-3 hours.
  • Put the fruit in 2 heatproof glasses or dishes and spoon over the yoghurt to cover the fruit.
  • Heat the grill to its highest setting.
  • Put the dishes on a grill tray and sprinkle each with 1 tablespoon demerara sugar. Grill for about 2 minutes, until the sugar has melted and caramelised. Serve immediately.
