Ingredients

The following ingredients have 4 Servings
  • 1/2 cup cranberries
  • 2 cups coconut milk
  • 2 tbs pure maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 cup chia seeds
  • 3 clementines

Instruction

  • In a blender or food processor, finely chop the cranberries. Add the coconut milk, maple syrup, and vanilla extract, and process to combine. It’s okay to leave little bits of cranberry in the mixture. Taste the mixture to see if you want to add a little more maple syrup or cranberries.
  • Transfer the mixture to a medium bowl, and slowly whisk in the chia seeds. Stir every few minutes for the next ten minutes so the chia seeds don’t clump together, then refrigerate the pudding. It will start to thicken immediately, but for best results, refrigerate for a few hours before serving.
  • Garnish with clementines and serve.
