Ingredients
The following ingredients have 20 Servings
- 1 cup raw almonds
- 1 cup dried cranberries
- 1 cup old fashioned oats
- 1/2 cup shredded coconut
- 1/2 cup pure maple syrup or 1 cup pitted medjool dates (11 – 12), chopped
- 1 teaspoon vanilla
- pinch of salt
Instruction
- Blend: Add ingredients to the bowl of a food processor and blend until mixed well and crumbly, stopping to scrape down the sides as needed.
- Chill: Place the mixture in the refrigerator for about 20 minutes to let it stiffen up a bit.
- Scoop and roll: Using a 1 tablespoon measuring spoon, scoop up rounded mounds of and roll into 1 inch balls.
- For a more finished look and to keep the dough from sticking to your fingers, roll the energy bites in shredded coconut or almond flour.
- Makes about 20 energy bites
- Store: Keep stored in an airtight container in the refrigerator for up to two weeks. To keep longer, store in the freezer for up to 2 – 3 months. Let thaw before eating.
