Ingredients
The following ingredients have 4 Servings
- 6 slices bacon (cooked and chopped)
- 2 cups self-rising white cornmeal mix
- 1½ Tbsp ranch dressing mix
- 1 Tbsp sugar or honey
- 1½ cups buttermilk
- 1 large egg
- 4 Tbsp unsalted butter, (melted)
- 1½ cups shredded sharp Cheddar cheese
Instruction
- Preheat oven to 425°.
- Heat 12-cup muffin pan in oven 5 minutes.
- Combine cornmeal mix, ranch seasoning, and sugar in a medium bowl. Stir in buttermilk and egg; stirring just until dry ingredients are moistened. Stir in melted butter, cheese, and bacon.
- Remove pan from oven, and coat with cooking spray. Spoon batter into the hot muffin pan, filling almost completely full.
- Bake for 15 to 20 minutes or until golden.
