Ingredients

The following ingredients have 4 Servings
  • 6 slices bacon (cooked and chopped)
  • 2 cups self-rising white cornmeal mix
  • 1½ Tbsp ranch dressing mix
  • 1 Tbsp sugar or honey
  • 1½ cups buttermilk
  • 1 large egg
  • 4 Tbsp unsalted butter, (melted)
  • 1½ cups shredded sharp Cheddar cheese

Instruction

  • Preheat oven to 425°.
  • Heat 12-cup muffin pan in oven 5 minutes.
  • Combine cornmeal mix, ranch seasoning, and sugar in a medium bowl. Stir in buttermilk and egg; stirring just until dry ingredients are moistened. Stir in melted butter, cheese, and bacon.
  • Remove pan from oven, and coat with cooking spray. Spoon batter into the hot muffin pan, filling almost completely full.
  • Bake for 15 to 20 minutes or until golden.
