Ingredients

The following ingredients have 6 Servings
  • 1 tbs olive oil
  • 1 onion finely chopped medium
  • 9 bacon rashers chopped
  • 2 carrots chopped
  • 2 celery sticks chopped
  • 1 parsnip chopped
  • 400g canned chopped tomatoes
  • 1 cup canned kidney beans drained
  • 4 chicken stock cubes dissolved
  • 2 cups savoy cabbage shredded
  • 2 tbs parsley chopped optional
  • 1L hot water

Instruction

  • Heat oil in a large saucepan over Medium-High heat.
  • Add onion and bacon, and cook, stirring, over medium heat for 5 minutes, or until onion is soft.
  • Add carrot, celery and parsnip, and cook for 3 minutes.
  • Add tomato, kidney beans and stock, and bring to the boil.
  • Reduce heat to low, then cover and simmer for 15 minutes.
  • Add cabbage and simmer for a further 10 minutes.
  • Season to taste with salt and pepper. Add parsley and stir through.
