Ingredients
The following ingredients have 6 Servings
- 1 tbs olive oil
- 1 onion finely chopped medium
- 9 bacon rashers chopped
- 2 carrots chopped
- 2 celery sticks chopped
- 1 parsnip chopped
- 400g canned chopped tomatoes
- 1 cup canned kidney beans drained
- 4 chicken stock cubes dissolved
- 2 cups savoy cabbage shredded
- 2 tbs parsley chopped optional
- 1L hot water
Instruction
- Heat oil in a large saucepan over Medium-High heat.
- Add onion and bacon, and cook, stirring, over medium heat for 5 minutes, or until onion is soft.
- Add carrot, celery and parsnip, and cook for 3 minutes.
- Add tomato, kidney beans and stock, and bring to the boil.
- Reduce heat to low, then cover and simmer for 15 minutes.
- Add cabbage and simmer for a further 10 minutes.
- Season to taste with salt and pepper. Add parsley and stir through.
