Ingredients

The following ingredients have 4 Servings
  • 4 cup(s) potatoes, cooked and cubed
  • 1/2 cup(s) chopped green bell pepper
  • 2 tablespoon(s) chopped onion
  • 1/3 cup(s) butter
  • - salt and freshly ground pepper
  • 4 - eggs
  • 1 cup(s) shredded cheddar cheese

Instruction

  • Cook potatoes, green pepper and onion in butter until lightly browned.
  • Season to taste.
  • Break eggs over potato mixture; cover, cook until eggs are done.
  • Sprinkle with cheese; cover and heat until cheese melts.
