Ingredients

The following ingredients have 2 Servings
  • 45ml coconut cream, plus a little extra for decorating
  • 10g desiccated coconut
  • 2 white marshmallows
  • ice cubes
  • the juice of ½ lime
  • 60ml vodka
  • 90ml coconut rum (such as Malibu)

Instruction

  • Spread a little coconut cream on to a plate and scatter the desiccated coconut on to another plate. Dip the rims of two martini glasses firstly in the coconut cream and then in the desiccated coconut to coat. Cut a small slit in the marshmallows and press onto the edge of each glass. 
  • Put a large handful of ice, lime juice, vodka, coconut rum and the rest of the coconut cream into a cocktail shaker and shake well until very cold. Strain into the two coconut-rimmed glasses and serve.
