  • 1 cup beef or chicken broth
  • 1¼ tsp dried rosemary
  • 1¼ tsp dried thyme
  • ½ cup fresh or frozen peas
  • ½ cup fresh or frozen corn
  • 2½ pounds russet potatoes ((peeled and cut into 1-inch chunks))
  • ¼ cup half and half, heavy cream, or milk
  • ¼ cup sour cream ((at room temperature))
  • 6 tbsp parmesan cheese ((divided))
  • 4 tbsp unsalted butter
  • ¼ tsp salt ((to taste))
