Ingredients
The following ingredients have 6 Servings
- 1 cup whole ground flaxseed meal
- ½ cup all-purpose King Arthur All-Purpose Flour (or 1 cup Almond Flour)
- ½ cup sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon
- 1 cup Cabot Cottage Cheese
- 2 large eggs
- 1 cup whole milk
- Nonstick cooking spray
Instruction
- HEAT a large nonstick pan over medium heat.
- COMBINE the ground flaxseed meal, flour, sugar, baking powder, baking soda, salt and cinnamon in a large bowl. Sift with a whisk to mix.
- WHISK the cottage cheese, eggs, and whole milk in a medium bowl until thoroughly combined.
- FOLD the wet mixture into the dry ingredients slowly, stirring well. The batter should be thick and wet but not runny.
- SPRAY the pan with nonstick cooking spray, and pour the batter onto the hot pan in small rounds.
- COOK until bubbles start to form on the surface and the pancake lifts easily at the edges. Flip and cook the other side until browned. Serve hot with your favorite toppings.
