Ingredients

The following ingredients have 4 Servings
  • ½ cup mayonnaise
  • 1 tbsp lemon juice
  • 2 tbsp apricot preserves (*no sugar added*)
  • 1 tbsp curry powder
  • 2 cups cubed or shredded cooked chicken
  • 2 tbsp slivered almonds (*omit for nut allergies)
  • 1 thinly sliced green onion
  • 2 tbsp chopped cilantro

Instruction

  • In a medium mixing bowl, stir together the mayonnaise, lemon juice, and apricot preserves.
  • Add the curry powder and still well until the mixture is smooth.
  • Stir the cooked chicken into the mixture and coat it well, then add the slivered almonds, sliced green onions, and chopped cilantro. Stir it all to combine.
  • Serve over green for a salad or enjoy in a sandwich or wrap.
  • Store any leftovers covered in the fridge for up to three days.
