Ingredients
The following ingredients have 4 Servings
- ½ cup mayonnaise
- 1 tbsp lemon juice
- 2 tbsp apricot preserves (*no sugar added*)
- 1 tbsp curry powder
- 2 cups cubed or shredded cooked chicken
- 2 tbsp slivered almonds (*omit for nut allergies)
- 1 thinly sliced green onion
- 2 tbsp chopped cilantro
Instruction
- In a medium mixing bowl, stir together the mayonnaise, lemon juice, and apricot preserves.
- Add the curry powder and still well until the mixture is smooth.
- Stir the cooked chicken into the mixture and coat it well, then add the slivered almonds, sliced green onions, and chopped cilantro. Stir it all to combine.
- Serve over green for a salad or enjoy in a sandwich or wrap.
- Store any leftovers covered in the fridge for up to three days.
