Ingredients

The following ingredients have 12 Servings
  • Cornmeal Waffles
  • 2 cups all purpose flour
  • 1 1/2 cups fine yellow cornmeal
  • 1 Tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1/4 cup sugar
  • 6 Tbsp melted butter (cooled)
  • 3 cups buttermilk
  • 3 eggs (separated)
  • Brown Sugar Honey Butter
  • 1 stick butter (softened)
  • 2 Tbsp honey
  • 2 Tbsp light brown sugar
  • 2 tsp cinnamon
  • 1/2 tsp salt

Instruction

  • Cornmeal Waffles: Heat the waffle iron and preheat the oven to 250 degrees.
  • In a large mixing bowl, whisk together the flour, cornmeal, baking powder, baking soda, salt, cinnamon and sugar.
  • In another bowl, whisk together the melted butter, buttermilk and egg yolks and stir into the flour mixture, combining to form a smooth batter.
  • In a clean bowl, beat the egg whites with an electric mixer until stiff peaks form.
  • Carefully fold in the eggs whites to the waffle batter, being careful not to overmix.
  • Spoon 1/3 - 1/2 cup batter into each waffle compartment and cook until golden and crisp, about 3-4 minutes.
  • Place cooked waffles on a baking sheet and hold in preheated oven while you cook the remaining waffles.
  • Brown Sugar Honey Butter: Combine all ingredients in bowl and mix until smooth and well combined.
  • Top waffles with butter and syrup if desired and enjoy!
