Ingredients
The following ingredients have 12 Servings
- Cornmeal Waffles
- 2 cups all purpose flour
- 1 1/2 cups fine yellow cornmeal
- 1 Tbsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 1/4 cup sugar
- 6 Tbsp melted butter (cooled)
- 3 cups buttermilk
- 3 eggs (separated)
- Brown Sugar Honey Butter
- 1 stick butter (softened)
- 2 Tbsp honey
- 2 Tbsp light brown sugar
- 2 tsp cinnamon
- 1/2 tsp salt
Instruction
- Cornmeal Waffles: Heat the waffle iron and preheat the oven to 250 degrees.
- In a large mixing bowl, whisk together the flour, cornmeal, baking powder, baking soda, salt, cinnamon and sugar.
- In another bowl, whisk together the melted butter, buttermilk and egg yolks and stir into the flour mixture, combining to form a smooth batter.
- In a clean bowl, beat the egg whites with an electric mixer until stiff peaks form.
- Carefully fold in the eggs whites to the waffle batter, being careful not to overmix.
- Spoon 1/3 - 1/2 cup batter into each waffle compartment and cook until golden and crisp, about 3-4 minutes.
- Place cooked waffles on a baking sheet and hold in preheated oven while you cook the remaining waffles.
- Brown Sugar Honey Butter: Combine all ingredients in bowl and mix until smooth and well combined.
- Top waffles with butter and syrup if desired and enjoy!
