Ingredients

The following ingredients have 4 Servings
  • 4 Tbsp butter, melted
  • 1 cup milk or buttermilk
  • 1/2 cup honey
  • 2 eggs
  • 1 cup yellow cornmeal
  • 1 cup all purpose flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1 batch honey cornbread, cooled and cut into large cubes
  • 2 Tbsp butter, for frying
  • 1/2 cup thinly sliced red onion
  • 3-4 medium to large tomatoes, cut into large wedges or diced
  • 1/2 cup cherry tomatoes, halved or whole
  • 1 handful basil leaves, sliced
  • 2 Tbsp olive oil
  • 2 Tbsp apple cider vinegar (or use whatever kind of vinegar you like)
  • salt and pepper, to taste
