Ingredients
The following ingredients have 4 Servings
- 4 Tbsp butter, melted
- 1 cup milk or buttermilk
- 1/2 cup honey
- 2 eggs
- 1 cup yellow cornmeal
- 1 cup all purpose flour
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1 batch honey cornbread, cooled and cut into large cubes
- 2 Tbsp butter, for frying
- 1/2 cup thinly sliced red onion
- 3-4 medium to large tomatoes, cut into large wedges or diced
- 1/2 cup cherry tomatoes, halved or whole
- 1 handful basil leaves, sliced
- 2 Tbsp olive oil
- 2 Tbsp apple cider vinegar (or use whatever kind of vinegar you like)
- salt and pepper, to taste
