Ingredients

The following ingredients have 6 Servings
  • 1/4 cup chopped jalapenos, deveined and deseeded
  • 2 tablespoons chopped cilantro
  • 1/4 cup plus 1 tablespoon red onion
  • 3/4 cup cooked whole kernel corn
  • juice from 1/2 lime
  • 1/4 teaspoon salt
  • 3 avocados

Instruction

  • In a bowl combine all of the ingredients except for the avocados. Using a spoon scoop out the inner part of the avocado leaving a thin layer around the edges. Fill the avocado with the corn salsa and season with additional salt. Plate with the additional avocado filling.
