Ingredients
The following ingredients have 4 Servings
- 3/4 cup all-purpose flour
- 1/4 cup yellow cornmeal
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups corn (see note)
- 2 teaspoons minced garlic
- 1/2 cup chopped yellow onion
- 1/2 cup chopped green bell pepper
- 1/2 cup shredded cheddar cheese
- 1 large egg
- 1/4 cup half and half (see note)
- vegetable oil (for frying)
Instruction
- In a large mixing bowl, whisk dry ingredients together: cornmeal, flour, baking powder, salt and pepper.
- Add corn and toss with dry ingredients.
- Add onion, garlic and pepper. Mix in.
- In a small bowl or a glass measuring cup, whisk wet ingredients together (half and half and egg).
- Add cheese and wet ingredients to corn mixture. Mix well.
- Heat up oil in a large skillet, over medium heat.
- Pour 1/4 cup of corn mixture into a pan and fry for 2 to 3 minutes per side or until golden brown.
- Serve with Ranch dip or sour cream.
