Ingredients

The following ingredients have 4 Servings
  • 3/4 cup all-purpose flour
  • 1/4 cup yellow cornmeal
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups corn (see note)
  • 2 teaspoons minced garlic
  • 1/2 cup chopped yellow onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup shredded cheddar cheese
  • 1 large egg
  • 1/4 cup half and half (see note)
  • vegetable oil (for frying)

Instruction

  • In a large mixing bowl, whisk dry ingredients together: cornmeal, flour, baking powder, salt and pepper.
  • Add corn and toss with dry ingredients.
  • Add onion, garlic and pepper. Mix in.
  • In a small bowl or a glass measuring cup, whisk wet ingredients together (half and half and egg).
  • Add cheese and wet ingredients to corn mixture. Mix well.
  • Heat up oil in a large skillet, over medium heat.
  • Pour 1/4 cup of corn mixture into a pan and fry for 2 to 3 minutes per side or until golden brown.
  • Serve with Ranch dip or sour cream.
