Ingredients

The following ingredients have 6 Servings
  • 1 pound sweet Italian sausage
  • 1 medium onion, chopped
  • 1 1/2 pounds potatoes, peeled and cut into 1/2-inch cubes
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 (15.25 oz) can whole kernel corn, drained
  • 1 (14.75 oz) can cream-style corn
  • 1 (12 oz) can evaporated milk
  • Chopped chives

Instruction

  • In a large Dutch oven over medium-high heat, cook the sausage and the onion until the sausage is browned and the onions are tender. Drain well.
  • Stir in the potatoes, chicken broth, salt and pepper. Bring to a boil, then cover the pot and reduce the heat.  Simmer for 10-15 minutes, or until the potatoes are tender.
  • Stir in the whole kernel corn, cream-style corn and evaporated milk. Cook until warmed through.
  • Top with chopped chives to serve.
