Ingredients
The following ingredients have 4 Servings
- 0.25 cup shelled Pistachio
- 2 cups Corn salad (lamb's lettuce)
- 1 clove garlic cloves (chopped)
- 1.5 Tbsps olive oil
- 1 cup cream cheese (softened)
- 0.5 cup Sour cream
- salt (to taste)
- freshly ground Black pepper (to taste)
- fresh lemon juice (to taste)
- crusty whole grain bread (to serve)
Instruction
- Dry roast the pistachios in a hot skillet, remove from pan and let cool.
- Rinse the lettuce and gently shake dry.
- In a blender or food processor, combine the cooled pistachios nuts, lamb's lettuce, garlic and oil and mix until smooth.
- In a bowl, combine blender contents, cream cheese, sour cream, salt, pepper, and lemon juice.
- Serve on fresh crusty bread.
