Ingredients
The following ingredients have 4 Servings
- 2 15 oz cans corn
- 1 15 oz can black beans
- 1 15 oz can black eyed peas
- 2 10 oz cans Rotel or diced tomatoes
- 1 4 oz can chopped green chilis or jalapenos
- 1 red onion (diced)
- 1 cup italian dressing (or fat free italian dressing)
- 1 Tbsp sugar
- kosher salt, pepper
- tortilla chips
- Optional: hot sauce, apple cider vinegar
Instruction
- Drain the cans of corn and put the corn into a big bowl.
- Drain the can of black beans and black eyed peas in a colander and rinse with water. Add the beans to the bowl.
- Drain and add the Rotel tomatoes, green chilis or jalapenos, and diced red onion to the bowl.
- Pour the italian dressing and sugar into the bowl and stir to mix evenly. Add kosher salt and pepper to taste. Optional: add hot sauceNote: If using fat free italian dressing, add a tsp of apple cider to add more tang if needed.
- Serve with tortilla chips for dipping.
