Ingredients

The following ingredients have 4 Servings
  • 2 15 oz cans corn
  • 1 15 oz can black beans
  • 1 15 oz can black eyed peas
  • 2 10 oz cans Rotel or diced tomatoes
  • 1 4 oz can chopped green chilis or jalapenos
  • 1 red onion (diced)
  • 1 cup italian dressing (or fat free italian dressing)
  • 1 Tbsp sugar
  • kosher salt, pepper
  • tortilla chips
  • Optional: hot sauce, apple cider vinegar

Instruction

  • Drain the cans of corn and put the corn into a big bowl.
  • Drain the can of black beans and black eyed peas in a colander and rinse with water. Add the beans to the bowl.
  • Drain and add the Rotel tomatoes, green chilis or jalapenos, and diced red onion to the bowl.
  • Pour the italian dressing and sugar into the bowl and stir to mix evenly. Add kosher salt and pepper to taste. Optional: add hot sauceNote: If using fat free italian dressing, add a tsp of apple cider to add more tang if needed.
  • Serve with tortilla chips for dipping.
