The following ingredients have 4 Servings

- 1 large onion, roughly chopped (about 2 cups)
- 1 large carrot, chopped (about 1/2 cup)
- 2 cloves garlic, peeled and minced
- 2 Tablespoons all-purpose flour
- 3 cups red wine (See Tip 1)
- 3 cups low sodium chicken broth
- 2 Tablespoons tomato paste
- 1 teaspoon Kosher salt
- ¼ teaspoon freshly ground black pepper
- 1/2 teaspoon dried thyme
- 10 sprigs fresh parsley
- 8 skinless bone-in chicken thighs, trimmed of fat
- Salt and freshly ground black pepper
- 18 to 20 pearl onions, peeled (See Tip 2)
- 1 Tablespoon unsalted butter
- 1/2 cup low sodium chicken broth
- 1 Tablespoon olive oil
- 8 ounces mushrooms cleaned and sliced
- 1 Tablespoon Cognac
