Ingredients

The following ingredients have 5 Servings
  • 1 cup real mayonnaise
  • 1 cup sour cream
  • 2 (11 ounce) cans whole kernel corn with peppers (like Mexicorn), drained
  • 1 (7 ounce) can green chilies, drained
  • 1 can diced tomatoes and green chilies (like Rotel), drained
  • 1 cup finely shredded sharp cheddar cheese
  • 1 cup finely shredded pepper jack cheese
  • 1/2 cup sliced green onions
  • 1/4 cup chopped pickled jalapeno, or to taste
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Creole or Cajun seasoning, or to taste, optional

Instruction

  • Combine all ingredients in a covered storage bowl; taste and adjust seasonings. Cover and refrigerate overnight.
  • Let rest at room temperature before serving. Serve with scoop corn chips and/or tortilla chips.
