Ingredients
The following ingredients have 4 Servings
- 2 Lbs Cod
- 3 Whole Shallots (sliced)
- 6 Cloves Garlic (sliced)
- 2 Tbsp Olive Oil
- 1 Tbsp Fish sauce
- 28 Ounces Grape tomatoes (halved)
- 1 Tsp Salt
- 2 Tsp Black pepper
- 1 Tsp Red pepper flakes
Instruction
- Salt and pepper the cod fillets on both sides. Set aside.Begin by heating the oil in a skillet. Once warm, add the garlic and shallots. Sauté for 3 - 5 minutes. Cook them until they have a nice browning. Remove from the skillet and set aside. Add the tomatoes to the skillet and simmer until they blister and the liquid is released. Once the sauce is a sauce, add in the cod. Simmer for 5 - 7 minutes.To serve, add the tomato sauce to a bowl and top with cod. Then, top the cod with the sautéed shallots and garlic. Enjoy!
