Ingredients

The following ingredients have 6 Servings
  • 3 acorn squash
  • 3 tablespoons coconut oil
  • 1 teaspoon curry powder
  • 1/2 cup dried coconut flakes
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instruction

  • Preheat the oven to 350 degrees. Split the squash in half, then scoop out the innards and seeds. Slice them into half-inch thick slices. Toss them with the remaining ingredients and lay onto a greased baking sheet. Roast for 30 to 35 minutes.
