Ingredients
The following ingredients have 4 Servings
- 2 cups jasmine rice
- 1 can coconut milk
- 1 1/2 cups of water
- 1 tablespoon canola oil
- 1/4 teaspoon salt (or to taste)
- 1 tablespoon granulated sugar (optional)
- 1/2 teaspoon coconut extract
- 1 tablespoon fresh cilantro (chopped)
- Shredded coconut
Instruction
- Rinse the jasmine rice several times until the water runs clear drain well of any excess water. Transfer to a medium pot.
- Add the coconut milk, water, oil, coconut extract, salt, and sugar.
- On high heat, bring the mixture to a boil. Once it starts to boil, turn the heat down to low, cover with a lid and cook covered for 20 minutes.
- Uncover and continue to cook for another 5 minutes.
- Once done, cover and let stand for 10 minutes.
- Fluff it up with two forks and serve.
- Garnish with some chopped cilantro and shredded coconut.
