Ingredients

The following ingredients have 4 Servings
  • 2 cups jasmine rice
  • 1 can coconut milk
  • 1 1/2 cups of water
  • 1 tablespoon canola oil
  • 1/4 teaspoon salt (or to taste)
  • 1 tablespoon granulated sugar (optional)
  • 1/2 teaspoon coconut extract
  • 1 tablespoon fresh cilantro (chopped)
  • Shredded coconut

Instruction

  • Rinse the jasmine rice several times until the water runs clear drain well of any excess water. Transfer to a medium pot.
  • Add the coconut milk, water, oil, coconut extract, salt, and sugar.
  • On high heat, bring the mixture to a boil. Once it starts to boil, turn the heat down to low, cover with a lid and cook covered for 20 minutes.
  • Uncover and continue to cook for another 5 minutes.
  • Once done, cover and let stand for 10 minutes.
  • Fluff it up with two forks and serve.
  • Garnish with some chopped cilantro and shredded coconut.
