Ingredients
The following ingredients have 4 Servings
- 1 1/4 cup basmati rice (soaked for 30 minutes and drained)
- 1 cup thick coconut milk
- 1 cup chopped mixed vegetables
- 1 onion (thinly sliced)
- 2 cloves
- 2 cardamoms
- 1 bay leaf
- 2 green chilies
- 1 teaspoon crushed ginger garlic
- Salt
- 1 tablespoon oil
- 1 cup water
Instruction
- Heat 1 tablespoon oil in a pressure cooker base.
- Add cumin seeds, bay leaf,cardamom, and cloves. Saute well.
- Add slit green chilies and crushed ginger garlic. Saute well for 2 minutes
- Add thinly sliced onions and saute for 2 minutes
- Add the vegetables and mix well.
- Add drained rice and saute for 2 more minutes
- Now add the coconut milk, 1 cup water and required salt. Mix well and simmer for 5 minutes.
- Pressure cook for 2 whistles. Once the pressure is released, fluff up and serve coconut milk pulao hot or warm
