Ingredients

The following ingredients have 4 Servings
  • 1 1/2 cups long grain Jasmine rice
  • 3/4 cup coconut milk (not coconut water)
  • 1 1/2 cups water
  • 1/2 teaspoon white sugar
  • 1/4 teaspoon salt
  • 1/4 cup finely chopped cilantro leaves
  • 1 - 2 Tablespoons fresh lime juice (adjust to your taste)

Instruction

  • In a medium saucepan over medium heat, combine the rice, coconut milk, water, sugar and salt.
  • Cover saucepan and bring to a simmer. Turn heat down to medium-low.
  • Cook until all liquid has absorbed, about 15 minutes.
  • Remove saucepan from the heat and let rest, still covered, for 10 minutes.
  • Fluff rice.
  • Add chopped coriander (cilantro) and lime juice. Adjust seasonings.
  • Serve!
