Ingredients
The following ingredients have 4 Servings
- 1 1/2 cups long grain Jasmine rice
- 3/4 cup coconut milk (not coconut water)
- 1 1/2 cups water
- 1/2 teaspoon white sugar
- 1/4 teaspoon salt
- 1/4 cup finely chopped cilantro leaves
- 1 - 2 Tablespoons fresh lime juice (adjust to your taste)
Instruction
- In a medium saucepan over medium heat, combine the rice, coconut milk, water, sugar and salt.
- Cover saucepan and bring to a simmer. Turn heat down to medium-low.
- Cook until all liquid has absorbed, about 15 minutes.
- Remove saucepan from the heat and let rest, still covered, for 10 minutes.
- Fluff rice.
- Add chopped coriander (cilantro) and lime juice. Adjust seasonings.
- Serve!
