Ingredients

The following ingredients have 4 Servings
  • 2 tablespoons of coconut oil
  • 3 cloves of garlic, minced
  • small yellow onion, finely diced
  • 1 teaspoon of cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of turmeric
  • 2 teaspoons of fine sea salt
  • 1 28-ounce can of crushed tomatoes
  • 1 1/2 tablespoons of ginger paste (or grated fresh ginger)
  • 1 15-ounce can coconut milk
  • 1 cup dried lentils (I used red but brown or green would also work well!)
  • 3 cups of water
  • 1 bell pepper, thinly sliced
  • 1 cup of frozen peas
  • 15 ounce can of lite coconut milk
  • 1 1/4 cups of water
  • 1 1/2 cups of long grain rice (I like jasmine or basmati in this recipe)
  • 1/2 teaspoon of salt
  • optional: 1/2 teaspoon of sugar
