Ingredients
The following ingredients have 4 Servings
- 2 tablespoons of coconut oil
- 3 cloves of garlic, minced
- small yellow onion, finely diced
- 1 teaspoon of cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of turmeric
- 2 teaspoons of fine sea salt
- 1 28-ounce can of crushed tomatoes
- 1 1/2 tablespoons of ginger paste (or grated fresh ginger)
- 1 15-ounce can coconut milk
- 1 cup dried lentils (I used red but brown or green would also work well!)
- 3 cups of water
- 1 bell pepper, thinly sliced
- 1 cup of frozen peas
- 15 ounce can of lite coconut milk
- 1 1/4 cups of water
- 1 1/2 cups of long grain rice (I like jasmine or basmati in this recipe)
- 1/2 teaspoon of salt
- optional: 1/2 teaspoon of sugar
