- 2 tbsp coconut flour
- ¼ tsp baking soda
- pinch of salt
- 1 egg
- 2 tbsp coconut oil (melted)
- 2 tbsp maple syrup (or low-carb sweetener of choice*)
- 1 tbsp coconut milk
- ½ tsp vanilla extract
- 1-2 tsp sprinkles (optional**)
Instruction
- In a large mug, whisk together coconut flour, baking soda, and salt.
- Add egg, coconut oil, maple syrup, coconut milk, and vanilla extract and mix thoroughly to combine. Very gently fold in optional sprinkles.
- Microwave for about 2 minutes. Start checking at about 1.5 minutes. Let sit for a couple minutes before eating.
- Optionally, top with a few more sprinkles before serving.
