Ingredients

The following ingredients have 1 Servings
  • 2 tbsp coconut flour
  • ¼ tsp baking soda
  • pinch of salt
  • 1 egg
  • 2 tbsp coconut oil (melted)
  • 2 tbsp maple syrup (or low-carb sweetener of choice*)
  • 1 tbsp coconut milk
  • ½ tsp vanilla extract
  • 1-2 tsp sprinkles (optional**)

Instruction

  • In a large mug, whisk together coconut flour, baking soda, and salt.
  • Add egg, coconut oil, maple syrup, coconut milk, and vanilla extract and mix thoroughly to combine. Very gently fold in optional sprinkles.
  • Microwave for about 2 minutes. Start checking at about 1.5 minutes. Let sit for a couple minutes before eating.
  • Optionally, top with a few more sprinkles before serving.
