Ingredients

The following ingredients have 4 Servings
  • 4 6oz Mahi Mahi filets
  • 16 Baby Bella Peppers sliced into thin strips
  • 2 Shallots sliced into thin strips
  • 3/4 cup Lite Coconut Milk
  • 2 Tbs Green Curry Paste
  • 1 Thumb of Ginger minced (peel first)
  • Zest and Juice from 1 Lime
  • 1/4 tsp Sea Salt
  • 1/4 tsp Black Pepper
  • Non-stick Coconut Oil Cooking Spray
  • Tin foil

Instruction

  • Preheat oven to 400 degrees.
  • Tear off 4 sheets of tin foil (about 12-18 inches each).
  • Spray tin foil with Cooking Spray.
  • Add Peppers and Shallots evenly to each foil piece.
  • Top each with a Mahi Mahi fillet.
  • In a small bowl whisk together Coconut Milk, Green Curry Paste, Ginger, Zest and Lime Juice, Salt, and Pepper.
  • Spoon mixture evenly over each Fish and Peppers.
  • Bring up the foil sides, double fold top and ends to seal packet.
  • Place foil packets on a baking sheet seam side up.
  • Bake 25 minutes or until fish is 145 degrees.
