Ingredients
The following ingredients have 4 Servings
- 4 6oz Mahi Mahi filets
- 16 Baby Bella Peppers sliced into thin strips
- 2 Shallots sliced into thin strips
- 3/4 cup Lite Coconut Milk
- 2 Tbs Green Curry Paste
- 1 Thumb of Ginger minced (peel first)
- Zest and Juice from 1 Lime
- 1/4 tsp Sea Salt
- 1/4 tsp Black Pepper
- Non-stick Coconut Oil Cooking Spray
- Tin foil
Instruction
- Preheat oven to 400 degrees.
- Tear off 4 sheets of tin foil (about 12-18 inches each).
- Spray tin foil with Cooking Spray.
- Add Peppers and Shallots evenly to each foil piece.
- Top each with a Mahi Mahi fillet.
- In a small bowl whisk together Coconut Milk, Green Curry Paste, Ginger, Zest and Lime Juice, Salt, and Pepper.
- Spoon mixture evenly over each Fish and Peppers.
- Bring up the foil sides, double fold top and ends to seal packet.
- Place foil packets on a baking sheet seam side up.
- Bake 25 minutes or until fish is 145 degrees.
