Ingredients

The following ingredients have 4 Servings
  • 2/3 cup(s) rice vinegar
  • 1 can(s) coconut milk
  • 1/4 cup(s) soy sauce
  • 8 clove(s) garlic smashed
  • 1/2 cup(s) sugar
  • 2 - inch piece of turmeric or ginger peeled and sliced
  • 4 - birds eye red chilies smashed
  • 1 - whole chicken cut into 8 pieces
  • - fresh rice noodles for serving

Instruction

  • Mix the rice vinegar, coconut milk, soy sauce, sugar, garlic, turmeric, bay leaves and red chilies together in a large bowl. Add the chicken and coat well. Let marinate at least 3 hours or overnight
  • Transfer the chicken and marinade in a large deep saucepan. Bring to a boil and reduce to a simmer and simmer for 30 minutes.
  • Remove the chicken and stain the sauce discarding any solids. Bring sauce to a boil and reduce to thicken. Serve over rice noodles with sauce
