Ingredients

The following ingredients have 4 Servings
  • 2 eggs
  • 300 ml milk
  • 1 teaspoon vanilla essence
  • 2 1/2 cups plain flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 cup caster sugar
  • 150 g shredded coconut
  • 75 g unsalted butter (melted)

Instruction

  • Preheat oven to 350°F (180°C), and grease and flour a loaf tin.
  • Sift the flour and baking powder together into a bowl and add the cinnamon, sugar, and coconut. Stir to combine, and make a well in the centre.
  • Whisk the eggs, milk, and vanilla together. Pour into the flour mixture and mix until just combined.
  • Add melted butter and stir until the mixture is smooth, being careful not to overmix.
  • Pour into the prepared loaf pan and bake for 1 hour or until a cake tester comes out clean.
  • Leave in the pan to cool for 5 minutes before removing and placing onto a wire rack to cool.
