Ingredients
The following ingredients have 4 Servings
- 2 eggs
- 300 ml milk
- 1 teaspoon vanilla essence
- 2 1/2 cups plain flour
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 cup caster sugar
- 150 g shredded coconut
- 75 g unsalted butter (melted)
Instruction
- Preheat oven to 350°F (180°C), and grease and flour a loaf tin.
- Sift the flour and baking powder together into a bowl and add the cinnamon, sugar, and coconut. Stir to combine, and make a well in the centre.
- Whisk the eggs, milk, and vanilla together. Pour into the flour mixture and mix until just combined.
- Add melted butter and stir until the mixture is smooth, being careful not to overmix.
- Pour into the prepared loaf pan and bake for 1 hour or until a cake tester comes out clean.
- Leave in the pan to cool for 5 minutes before removing and placing onto a wire rack to cool.
