  • 2 cups bitter orange juice or a mix of orange juice with white vinegar
  • 1/2 teaspoon ground black pepper
  • 3 Pounds of boneless pork butt or pork shoulder cut into pieces 2-1/2 IN Cubes.
  • 1 large red onion (sliced (optional))
  • 2 cloves garlic
  • 1 tsp. dried Mexican oregano
  • 1/4 cup lard
  • 1 Large size oven bag (Optional)
  • Salt to taste
