Ingredients

The following ingredients have 1 Servings
  • 1/4 cup(s) diced red bell pepper
  • 1/4 cup(s) diced green bell pepper
  • 1 - green onion, chopped
  • 1 tablespoon(s) chopped cilantro
  • 1/2 - avocado
  • 2 dash(es) cayenne
  • 1/4 teaspoon(s) cumin
  • 1/4 teaspoon(s) chili powder
  • 1 - egg
  • 1/2 tablespoon(s) olive or coconut oil
  • 1 dash(es) Kosher salt
  • 1 dash(es) black pepper

Instruction

  • Dice and chop peppers, onion, and cilantro.
  • Slice avocado and set aside.
  • Scramble egg and add all seasonings. Set aside.
  • Put coconut or olive oil in small saute pan and heat. Saute peppers, onions and half cilantro in oil.
  • Pour egg over saute mixture in pan. Stir until eggs are cooked.
  • Put onto a plate, add sliced avocado on top, and garnish with remaining cilantro.
