The following ingredients have 1 Servings
- 1/4 cup(s) diced red bell pepper
- 1/4 cup(s) diced green bell pepper
- 1 - green onion, chopped
- 1 tablespoon(s) chopped cilantro
- 1/2 - avocado
- 2 dash(es) cayenne
- 1/4 teaspoon(s) cumin
- 1/4 teaspoon(s) chili powder
- 1 - egg
- 1/2 tablespoon(s) olive or coconut oil
- 1 dash(es) Kosher salt
- 1 dash(es) black pepper
Instruction
- Dice and chop peppers, onion, and cilantro.
- Slice avocado and set aside.
- Scramble egg and add all seasonings. Set aside.
- Put coconut or olive oil in small saute pan and heat. Saute peppers, onions and half cilantro in oil.
- Pour egg over saute mixture in pan. Stir until eggs are cooked.
- Put onto a plate, add sliced avocado on top, and garnish with remaining cilantro.
