Ingredients

The following ingredients have 10 Servings
  • 1 Cup Quinoa Flour
  • 1 Cup Gluten-Free Baking Flour* (see notes)
  • 2 Tsp Baking Powder
  • 1/2 Cup Erythritol (or preferred granulated sweetener)
  • 3 Ripe Bananas (mashed)
  • 1/2 Cup Unsweetened Non-Dairy Milk
  • 1 Tsp Pure Madagascar Bourbon Vanilla Extract
  • 1/2 Tsp Cinnamon

Instruction

  • Preheat the oven to 375°F.
  • In a large mixing bowl, combine the flours, baking powder, and granulated sweetener. Mix together.
  • Add the mashed ripe bananas, milk, vanilla, and cinnamon. Mix again to form a smooth bread batter.
  • Pour the batter into a greased 8x4 loaf pan, smoothing out the top.
  • Bake the bread in the preheated oven for 35-40 minutes, until a tooth pick inserted in the center comes out clean.
  • Remove, let cool on a wire rack. Store in an airtight container or freeze for later by slicing the bread and wrapping each piece individually.
