Ingredients
The following ingredients have 4 Servings
- 21 ozs pork fillets (in one piece, ready to cook)
- 2 unwaxed Oranges (filleted, juice retained)
- 1 clove garlic cloves (finely chopped)
- 3 sprigs Lemon thyme (leaves chopped)
- 1 Tbsp honey
- 4 Tbsps olive oil
- 1 Tbsp parsley (chopped)
Instruction
- Preheat the grill.
- Cut a pocket in the long side of the meat.
- Mix together the oranges, garlic and the thyme and stuff into the meat. Close with kitchen twine.
- Mix together the honey, 4 tbsp oil, parsley, 1 tbsp orange juice and season with salt and ground black pepper. Brush onto the meat and place on the hot grill. Cook slowly for 20-30 min turning occasionally and brushing with the marinade every so often.
- Remove from the grill and serve on a wooden board.
