Ingredients

The following ingredients have 4 Servings
  • 1 Roast chicken (approx. 1.4 kg, cut into 8 pieces)
  • 2 Tbsps olive oil
  • 2 organic lemons (chopped)
  • 3 Tbsps black Olives (jar, drained)
  • 1 Tbsp Caper (jar, drained)
  • 1 bunch flat-leaf parsley (leaves finely chopped)
  • 0.667 cup dry white wine

Instruction

  • Season the chicken pieces with salt and ground black pepper. Heat the oil in a pan and fry the chicken pieces until golden-brown on all sides.
  • Add the lemons, olives and capers. Pour in the wine and stir to deglaze the pan. Cover and simmer over a medium heat for approx. 20-25 minutes.
  • Sprinkle with parsley and serve at once.
