Ingredients

The following ingredients have 8 Servings
  • 250 g butter
  • 250 g sugar
  • 4 egg
  • 3 lemon zested
  • 6 tbs lemon juice
  • 250 g self-raising flour

Instruction

  • Preheat oven to 170C.
  • Grease and line base of springform tin.
  • Cream butter and sugar until very light and creamy approximately 20 minutes.
  • Add eggs one at a time, beating well each time and add zest with last egg.
  • Fold in half the flour gently, add remaining flour then mix in juice.
  • Spoon into pan and bake 50-55 minutes or until skewer comes out clean.
  • When cool ice with citrus icing or just dust with icing sugar or leave plain.
