Ingredients
The following ingredients have 8 Servings
- 250 g butter
- 250 g sugar
- 4 egg
- 3 lemon zested
- 6 tbs lemon juice
- 250 g self-raising flour
Instruction
- Preheat oven to 170C.
- Grease and line base of springform tin.
- Cream butter and sugar until very light and creamy approximately 20 minutes.
- Add eggs one at a time, beating well each time and add zest with last egg.
- Fold in half the flour gently, add remaining flour then mix in juice.
- Spoon into pan and bake 50-55 minutes or until skewer comes out clean.
- When cool ice with citrus icing or just dust with icing sugar or leave plain.
