Ingredients

The following ingredients have 4 Servings
  • 6 sweet potatoes
  • 1/2 cup sugar (+ more for topping)
  • 1 tablespoon cinnamon (+ more for topping)
  • 1/2 tablespoon cayenne pepper
  • 1 cup brown sugar
  • 3 tablespoons honey
  • 1/2 cup evaporated milk
  • 1/4 cup butter
  • 2 tablespoon olive oil

Instruction

  • Preheat the oven to 375°F. Wash and skin the sweet potatoes with a potato peeler then cut into thin, even sized strips with a sharp knife.
  • Using a large bowl, toss the sweet potato strips in the olive oil until completely coated. Sprinkle on the sugar, cinnamon, and cayenne pepper.
  • Arrange the sweet potatoes on a greased baking sheet in a single layer. Bake for 15 minutes, flip, then bake for an additional 15 minutes, or until the potatoes are browning and crispy.
  • After flipping the fries, start the caramel sauce by melting the butter along with the brown sugar in a sauce pan over medium low heat. Add in the honey and stir constantly to prevent burning. Slowly add the evaporated milk, and stir until the sauce is thick and smooth. Let rest on the stove on the lowest (or ‘warm’) setting until the fries are ready, stirring occasionally.
  • Remove the sweet potato fries from the oven and serve right away alongside the caramel sauce. Enjoy!
